One lazy Sunday we followed Carol and Eddy down island to Kitti on the WSW of Pohnpei to the home of Yenti and Ray.  Carol and Eddy generously cooked for us a scrumptious lunch of cold noodles with tea eggs accompanied by many sidedishes.  One accompaniment were tasty and crunchy black mushrooms from Carol's hometown in China served with a perky dipping sauce.  This is how to make them.

Soak dried mushrooms in water overnight.  Drain water.

 

Bring a saucepan of fresh water to a rapid boil.   Add soaked mushrooms and boil for 1 minute.  Drain and allow to cool. 

 

Add cooked mushrooms to soup, stir fry or noodle dishes or serve with a dipping sauce of wasabi and soy sauce.
